Rum is the spirit of the Caribbean. It has been produced from the local sugar cane for almost 350 years. The Dominican Father du Tertre made reference to it in 1667. Over the centuries, the island rums have become increasingly refined. Today, well chosen estate rums are of an exceptional quality, offering a wide range of aromas and flavors that can easily compete with the depth and complexity of a great Cognac or Armagnac. Jamaica, Barbados, Trinidad...on these tropical islands a few independent distilleries, nestled among fields of sugar cane, distill and in small oak barrels slowly age the rum produced on their estate. In the Caribbean, the PLANTATION is the estate. Plantation rums are rare treasures which have not yet been sold to be made into anonymous blends and which are the production of a single estate, normally labeled with their year of distillation.
