Here?s one for all you cocktail geeks out there! We absolutely loved this product when we tasted in a couple of weeks back, so much so that we needed to have it in the store right away! China-China is an artisanal amer produced by the Bigallet Distillery, which was founded in 1872 in Lyon, France. Amer is the French version of amaro, meaning ?bitter.? Traditionally, China-China is drunk as a digestif after dinner, and can be served neat or on ice. It can also be used as a substitute for bitter liqueurs and vermouths. Amers have become increasingly popular in the United States, particularly for mixing in cocktails. The high orange note present in the China-China comes from a process of distilling orange peel maceration three times in copper alembic stills. This results in a higher alcohol content and more balanced bitterness than most bitter liqueurs, in addition to a stronger orange quality. To get the unique flavor, Bigallet uses both sweet oranges from Valencia and bitter oranges from the former Dutch island colony of Curaçao. Other aromatic ingredients in the China-China include anise, cinchona, gentian, clove, and other spices. Bigallet China-China is highly balanced and excellent for both sipping on its own or for use in cocktails. This is the secret ingredient to making super quaffable cocktails - this product simply rocks! The Hermitage Cocktail Created by Lee Hyde from Brasserie Zedel, London 2.5 oz vodka ½ oz Bigallet China-China ½ oz Lillet Blanc 3-4 dashes Bitter Truth aromatic bitters Stir all ingredients in a cocktail shaker with ice, and strain into cocktail glass. Garnish with a lemon twist. Tasting Note: Rich copper flavor. Warm orange aromatics, with blackened fruit cake, plump raisins and subtle spice. Bright, bitter orange , cinnamon and cardamom on the palate, with subtle hints of herb and mint. Very long finish. Brilliant!
