The 2017 Chardonnay is 20% pressed on the lees straight into barrel and matured for 10 months in French barriques, 10% new, 40% second-fill and 40% third-fill. It has a very Chablis-like bouquet of apple blossom, linseed and a light leesy component. The crisp, taut palate is fresh in the mouth and well balanced with a fine bead of acidity, and the finish delivers just the right amount of salinity. This is a well-crafted Chardonnay from Constantia.
