Somewhat reductive on the nose of baked apples, quince, honeydew melon, and nuances of lemon zest and sage. On the palate, a smart texture with a fresh but subtle acidity, again the tartness of a pear, and the delicate phenolics from skin contact. Plus, herbal nuances and smoky minerality remain very demanding until the end!
